Lima beans Salad
 
Rich in Fibers and Vitamin C.
Contains Isoflavone and Carotenoids.

Ingredients

1 kg raw or frozen lima beans
2 cups water

Dressing
2 garlic cloves, crushed
1 teaspoon salt
4 tablespoons lemon juice
5 tablespoons olive oil

Method of Preparation

In a large pan, cook lima beans in water over medium heat until tender.
Drain vegetables and put on serving plate.
In a small bowl, mix dressing ingredients.
Add to vegetables.

Serve hot or cold.

Tip: Vegetables should be cooked for a short time in a small amount of water to preserve their nutrients.
