Ingredients
500 g raw chicken liver
2 tablespoons soy sauce
3 tablespoons vinegar
1 tablespoon yellow mustard
1 teaspoon salt
1 pinch white pepper
1 pinch all spice
1 tablespoon vegetable oil
5 garlic cloves, crushed
2 tablespoons lemon juice
1 pinch parsley leaves
300 g french fries, frozen
Spray oil
Preparation
Trim visible fat from chicken liver.
Mix soy sauce with vinegar, mustard and seasoning.
Add to chicken liver.
Soak in the fridge for 1 hour.
Drain and keep sauce aside for later use.
In a large pan, heat oil, add chicken liver and stir-fry for 2 minutes.
Add sauce gradually, stirring slowly until all liquid evaporates and liver is no longer pink inside.
Add garlic and lemon juice.
Cover pan and cook for 1 more minute.
Garnish with parsley.
To prepare the french fries, spread them in a non-stick pan and spray them with the vegetable oil.
Put the fries in the pre-heated oven (200 C) for 15 min. Stir them and bake them again for 10 min or until golden.
Serve chicken liver hot with french fries.
Note: This dish should be eaten moderately as it is high in cholesterol.
You can substitute chicken kidneys with 500 g chicken breast or lean beef meat steak.
